The fresh
and bright interior of 3Greens reflects the menu prepared by Chef/Patron Caroline
Whitney assisted by her team, whilst the front of house is run by Sophie.
Caroline
has a proven track record within the industry having trained at Slough College
under John Hubert. She started her career with the Roux brothers and moved on
to the Savoy Group. She also ran the English side of the Orient Express for Pru
Leith. After the Orient Express Caroline took on Pratt's Restaurant as part of
a team assembled by Annie Foster-Firth. Caroline
and her husband later spent 18 months in Washington DC where she worked for an
'English Tea' outside catering service whilst her husband was Executive chef at
the world-renowned 'Fourways' restaurant in Dupont Circle.
Upon returning
to England Caroline was approached and took up the position of Restaurant Manager
for The Cafe Rouge Restaurant in the Barbican. She followed that with several
other city restaurants and then started her own catering agency and wound up founding
the flagship catering arm of Atlas Employment agency in Oxford Street. Once
the family came along Caroline freelanced producing Directors Lunches for several
Blue Chip companies as well as private and charity events.
Caroline
has prepared a varied menu to suit the taste of all her prospective guests, from
the ground crew and engineers who work on the aircraft to the owners of the aircraft
themselves. Dishes proving most popular at the moment are, for breakfast, the
traditional fried eggs, bacon, tomatoes, sausage, mushrooms and toast, the American
which comprises three pancakes with maple syrup and bacon, and the freshly baked
pain au raisin, pain au chocolat and croissants served with home made jam made
by Caroline from the fruits of her very own garden (as are the pickles and chutneys).
The most popular lunches are the 6oz steak burger, an American style Chilli with
long grain rice and the selection of filled baguettes and Paninis. And the stars
of the afternoon tea menu - well, throughout the day really, are Caroline's marvellous
home made cakes. |
